Self-Directed Learning: Food Studies/National Cheese Day
What is fromagère? How about an affineur? Or a cheesemonger, the folks who make and age cheese! Since the existence of cheese predates recorded history, humans will probably never precisely know who discovered cheese. Its emergence could have resulted from an accident involving milk left in the sun, causing a chemical reaction that separated the curds from the whey. Cheese has influenced New England’s history in surprising ways. For instance, New England Colonists in Rhode Island exchanged cheese for molasses from the West Indies and used the molasses to make rum! Discovering the history of cheese and how different varieties are made across time and cultures can support interests ranging from culinary arts to geography, food preservation to politics & religion! Whether you want to trade, share, sell, or eat your own homemade cheese, learning about cheese and sampling locally-made cheeses can inspire the cheesemonger in us all!
