Notes from Nan: Cajun Fest Up-Date!

So Gus and his crew are coming to Ashfield on Thursday they’re setting up all their stuff to cook outside. Gus is adding more items to his menu and, if you’re around on Thursday, come on over and he’ll be giving cooking demonstrations and let you sample what he’s making! Cajuns like to cook and when they cook, they like to cook for lots and lots of people and Gus likes to talk and show people how to do what he’s doing and he’ll have his guitar with him and would just love it if you’d want to show up with your banjo or fiddle or guitar or whatever and sit and play and cook and just have a grand old time!

He’s bringing a big, black caldron in which to make his jambalaya—he says it tastes best that way and then he’s bringing some sort of other outside oven he calls the Cajun microwave which is actually an outdoor smoker in which he’s going to be smoking up some Cochon de Lait!

If you have ever been to the Jazz Fest in New Orleans and had some of Skippy and Wanda’s cochon de lait po-boys, you will be here before you even finished reading this post! Cochon de Lait is smoked pork and Skippy and Wanda’s cochon de lait po-boy (kind of a grinder) was named Best Sandwich in America by Esquire Magazine this past march. Gus has Skippy and Wanda’s recipe and Lordy, honey, you will cry when you eat this thing, it is so weepingly good!

So now we got:

  • Fried Turkeys
  • Cochon de lait Po-Boys
  • Turkey and Andouille Jambalaya
  • Vegetarian Jambalaya
  • Baked eggplant with cheeses

And now he’s decided to add:

  • Baked Eggplant with our Crawfish Sauce. (We got our crawfish sauce recipe from Skippy and Wanda, too, so that’s why it’s so good.) (We don’t give out Skippy and Wanda’s recipes, but Gus’ll probably give you out his.)

Now, one would usually just say, “You don’t want to miss this”, but I’m thinking that by the time the whole thing is said and done, you’ll want to cancel your summer vacation for this. This looks to be a whole adventure right here at home!

Come early (on Thursday or in the day on Friday just to watch and learn and talk with Gus. He has tales to tell! He cooks for people all over the world (big corporate people, big fancy people, little funny people) and FOR US AT ELMER’S! You are going to love yourself some Gus! Every body does!

Come for the food, come for the dance, come for the music, come just for the experience!

Now, I was hoping to get my liquor license in time for this event, but it didn’t happen yet. So you’ll once again have to bring your own beer or wine. (All the applications are in and approved—we just don’t have it yet!)

So I was talking to my brother Chip in Minnesota the other day and he told me he wrote a poem about Gin and Tonics (I have no idea if this is unusual behavior or not). I asked him what he thought of the Gin and Tonic recipe I provided in the previous Grocery Talk. He said he hadn’t read it yet, which means that not only were we both thinking about G&Ts at the same time, we both wrote something about it (okay, that’s unusual behavior). So I thought it would be neat to share his poem with all of you. Let’s see if he has the same reverence for this classic libation as his brother.

Chip’s Gin and Tonic Poem

A Gin and Tonic is a wonderful drink,
Nice and crisp and easy.
But you can add to the mix
neat little tricks
like a stick in a Mr. Freezy!
Whether lemon or lime
Orange or grape
and cherry makes the best of.
But cut in two
the one that is blue
watermelon is the most Festive!

You. Have. Got. To. Be. Kidding. Me.

A freezy pop? You stick a tube of frozen, artificially flavored, BLUE sugar water in a Gin and Tonic? That’s like putting a Landau roof on a Jaguar.

Surely Sir Winston Churchill is spinning in his grave.

The Farm Report

STRAWBERRIES WILL BE IN MONDAY AND FRIDAY AFTERNOONS THIS WEEK

Well, it is Saturday afternoon and I have just checked the fruit and
veggie supply. We are almost out of the strawberries and peaches that
came in yesterday! I will definitely get more strawberries for
Monday, 6/16/08, and Friday, 6/20/08, afternoons. We have peaches now and more will
come in Friday, 6/20/08, morning with the Black River Produce (BRP)
order.

The good buys this week are Tomatoes from Pasiecnik’s Farm in Whately
and Red Leaf Lettuce from Paddy Flat Farm in Ashfield. New items from
BRP are Fennel, Leeks, Onion (Vidalia), Peaches, Potatoes, Summer
Squash, and Zuchinni.

    Glad to hear you are enjoying & spinning GJ4 over there. I’ve had some good press locally. Soon going for the big ones; Downbeat, Jazz Times, Bass Player, Modern Drummer, etc…. Hopefully some more reviews will be printed! Sold a whole bunch of these to a distributor in Tokyo, so I guess I’m big in Japan. Also I just got the word that it’s now available on iTunes. The link for that will be available at http://www.tonalities.com in just a few minutes, hopefully.
